Wheat Bread (this is my recipe) 

I use a KitchenAid mixer - It is 20 years old.   
Add ingredients in order listed to the mixer bowl: 

4 cups HOT water
1/2 cup oil (I use extra virgin olive oil)
1/2 cup honey
1 Tablespoon salt (I prefer Kosher)
10 cups freshly ground whole wheat flour
          (I use Wheat Montana Farms hard winter white: Prairie Gold)
2 Tablespoons instant yeast (I keep mine in the freezer in air-tight glass jar w/lid)

Turn on KA and mix for 8-10 minutes.  Remove dough hook and let rest for 5 minutes.  

Sprinkle flour on counter and divide dough into three loaves.  Spray pans (I use stoneware bread pans - 8.5x5" base) and place dough in pans to let rise at least ten minutes - maybe 15!  (til double)

Bake at 350 for 40 minutes.  Brush crust with butter when you remove from oven.  Let rest for ten minutes then remove from pans to cooling racks.  Slice all three loaves with good bread knife.  Place two loaves in "reused" bread sacks and place in freezer.  If you bust out the butter and jam, the first loaf will be gone within an hour.  

I remove from the bread sack (in freezer) only the number of slices needed.  They can thaw on a plate or be toasted in toaster.  YUM

I served my mission in Italy.  Zucchini is an Italian word.  If the Italians saw how huge we grow our zucchini, they would react - probably talk with their hands...  Let me save you the lecture.  Pick them while they are small - then you don't have to give them to your neighbors.  They are delicious small.  When you make this bread, do NOT peel the zucchini. Grate the beautiful green skin into your batter.  I tend to grate only the green and discard the seedy/meaty innards.  Those green flecks in your bread are just beautiful.  And I dare say that most of the nutrition from zucchini comes from the green skin.   So, pick your zucchini when they are small, grate the skins and discard the seedy middle.  You will love this bread.  It is delicious.  No white flour used.  And Guittard (my personal favorite) milk chocolate chips just take it over the top.  Dusting the chips with flour before you add them to the batter helps keep them from sinking to the bottom during baking.  Be sure to wash the zucchini before grating.  

Zucchini Bread Bake 1 hour at 350°

3 eggs, well beaten
1 cup cooking oil
2 cups sugar
2 cups grated zucchini
3 tsp vanilla

3 cups flour (whole wheat)
1 tsp salt
1 Tbsp cinnamon
¼ tsp baking powder
1 tsp soda

Optional:  
½ cup chopped nuts
1 cup chocolate chips  (semi-sweet or dark for antioxidants) 

Combine eggs, oil, sugar, zucchini and vanilla.  Mix well.  

Sift dry ingredients (coat chocolate chips and remove from dry ingredients). Add dry to zucchini mixture, blending well.  Stir in nuts and chips. 

Grease and flour two 5x9x4" loaf pans.  Pour batter into pans.  Bake.
